Swans Down Mix-Easy Coconut White Cake and Lady Baltimore Cake

Here's a two fer from Swans Down. My Mother-in-Law absolutely swears by this cake flour, but

it seems to be hard to find these days. Just as I was about to resourcefully order a bunch online, I

found it at my crappy neighborhood supermarket. And it wasn't even expired! So now we pick up

six at a time for her which we usually get back in some baked form or another. And it IS good stuff!
